Knife designs have evolved over centuries and specific tasks require knives of different weights and design. For this reason we have listed our most popular riveted range according to whether the blade weight is heavy (fully forged) or less heavy (stamped).

The Riveted Range - Fully Forged

Forged according to traditional methods in long and carefully controlled process from one piece of high grade stainless steel, to produce a perfectly balanced knife of lasting quality and strength. The resulting knives, with their extra weight, give exceptional performance, even for the preparation of hard root vegetables, such as potatoes or parsnips, and are also ideally suited to precise tasks such as fine carving, filleting and slicing.

The Riveted Range - Stamped

Of lighter weight but of equal quality to forged knives. The steel is hot rolled into wedge shaped strips and then the knife is "stamped out" under enormous pressure. The knives then undergo the same processes as the forged range, creating knives which have the same properties but do not require the extra weight of the forged range, such as serrated carving, boning, palette and turning knives.

The Moulded Range

High grade, moulded "Profilon®" handles surround blades of identical quality to the Riveted ranges. "Profilon®" handles can be sterilised making them especially hygienic. In addition the non-slip property of the handles makes them particularly safe when used with wet hands.

As the designer behind their worldwide success, Laura Martin (with an Italian mother, Ukrainian father, Indian husband and growing up in French Canada) admits her designs are very much shaped by a fascination of different cultures.

In Mumbai to have a Hindu wedding ceremony Laura had the chance to visit many relatives and was fascinated to see their kitchens and cooking tools. Inspired by 'vatis', the stainless steel pot of choice to store Indian spices, grains and lentils, Laura bought every conceivable size of vatis at the local markets to bring back to New York. The design challenge was to make a suitably stylish way to store all of them in her tiny NY kitchen. Needless to say the only space available was wall space. After several magnetic prototypes and finalising high grade stainless steel manufacturers, the first Soho Spices product was born.

Why Zassenhaus?

Zassenhaus of Germany have been manufacturing high quality mills for over 100 years. They began in 1867, and first produced their famous coffee grinders 20 years later. The first pepper mills were produced in 1904. In 2000 they invented the first continuously adjustable grinding mechanism made with high quality ceramic.

Each mill has a patented mechanism, harder than steel, completely wear-proof and corrosion free. The mills are adjustable with 6 different settings from rough to fine grind to suit the user's requirements.

Unusually for a ceramic grinder, the mechanisms are each uniquely suited to the type of condiment - pepper, salt spices and dry herbs. So no jack of all trades here!

Zassenhaus pepper mills and salt mills have just recently been made available in the UK. Although I cannot at this stage say what is the experience of my customers with them, as they are so new, Zassenhaus has an excellent reputation. Having a ceramic grinder that is suited to the condiment also bodes well for the effectiveness of the millls.

25 year guarantee - we normally only stock mills with a lifetime guaranteed. It is, however, Zassenhaus' policy to offer a 25 year guarantee. I do not think that this reflects a lower quality product, just a company policy. I have said that they should make it a lifetime one if they want to be known amongst the best grinders on the market, which I believe they do! So, fingers crossed they will listen!!
